The fire in the hearth has burned right down. Glowing embers give off a new kind of heat with this single vineyard cabernet sauvignon. No fruit popping and spitting. No comical chocolate. This is carob, and it’s earthy and composty. Tiger-balmy. Is it austere? Only if you miss the comfort of obvious flavours. Relax. You don’t need them.
